How to Make Rosemary Syrup

Rosemary syrup, and other herb syrups, for rum and gin cocktails are one of the best and easiest ways to transform a cocktail from something regular into an impressive and special drink. The reason why I was reluctant to make cocktail syrups in the past was that it seemed a whole lot of effort for not a lot but it's so much easier than you think AND there are so many other things you can use it for... add to sparkling water, salad dressings and over ice cream or desserts. Impress your friends...

Ingredients:

1 cup water

1 cup sugar

4-5 fresh rosemary sprigs

 

Instructions:

  1. In a small saucepan, combine the water and sugar. Stir over medium heat until the sugar dissolves completely.
  2. Once the sugar is dissolved, add the rosemary sprigs to the saucepan. Bring the mixture to a simmer.
  3. Allow it to simmer for about 5 minutes, then remove from heat and let it steep for 10-15 minutes (the longer you steep, the stronger the rosemary flavour).
  4. Strain out the rosemary sprigs and let the syrup cool.
  5. Store the syrup in a sealed container in the fridge. It will keep for up to 2 weeks.

  • Iced Tea or Lemonade – Add to iced tea or lemonade for a refreshing herbal twist.
  • Coffee or Espresso – Use in iced coffee, lattes, or cold brew for an aromatic depth.
  • Salad Dressings – Combine with olive oil, vinegar, and mustard for a unique vinaigrette.
  • Fruit Salad – Drizzle over fruit salad for a sweet and savoury finish.
  • Glaze for Roasted Meats/Vegetables – Brush on meats or veggies for a flavorful glaze.
  • Sorbet or Ice Cream – Add to sorbet mixtures or drizzle over vanilla ice cream.
  • Baking – Incorporate into cakes, muffins, or cookies for a subtle herbal sweetness.
  • Water Infusion – Stir into still or sparkling water for a refreshing flavour
